Another visit to Jean-Paul Hévin. Read my previous post for a brief intro on this world-famous chocolatier, otherwise, plunge right in!
*4 locations available in Paris, check website for detail.
Yuzu (€5.80), composed of tonka croustillant, dark chocolate ganache, cream of yuzu juice and a Venezuela dark chocolate mousse. Varying textures with an acidic note from yuzu. Lovely.
Mazaltov (€4.90), cheesecake made from fat-free fromage blanc. I’ve been eyeing this piece the last few times I passed by Jean-Paul Hévin’s boutique because it looks just so…fluffy. When I actually tasted it, however, I was a bit disappointed because the texture was quite spongy and dry.
Tarte Chocolat Croustillante (€4.80), is very similar to the Tarte Chocolat I tried last time – dark chocolate and almond tart shell filled and baked with bitter chocolate ganache, then covered in a chocolate ganache miroir (glaze) – but this version has an extra layer praliné feuilleté, which adds a crunchy texture. Not bad, but for basic chocolate tarts, I still prefer the tarte chocolat from La Maison du Chocolat.
Of course, one is not to leave JPH without a box of macarons (€7.90/box of 5). I especially liked the Normandy, which is dark and milk chocolate ganache with salted butter caramel, and also Basil’in, composed of milk chocolate ganache with cassis nectar and basil.
i loveee JPH , for me their ultimate is their caramels!!! just like bits of heaven !!! tasted so good even better than the macaroons! i love the salted butter caramel and the hazelnut caramel!!! maybe you can try them next time you go JPH
Thanks for the recommendation, will definitely give the caramels a try next time I’m there :)
