Lipstick Cerise (€5.80) attracts the eyes immediately with its intense red and brilliant shine. The bottom, a “croustillant à la cassonade”, is a crunchy mix of crushed almonds and sweet almond paste. On top, layers of light whipped cream with kirsch, stewed cherries and half-cooked Morello cherries, and vanilla cream.

Le Chou à la Rhubarbe (€4.80), a crusted choux garnished with cream and stewed rhubarbe.

This tiny pâtisserie / boulangerie near Bastille opens at 7am – before anything else comes alive on the street – perfect for those who crave freshly baked viennoiseries for breakfast. The croissants, in my opinion, are especially well-worth the trek.

[Pastry Diary] Un Dimanche à Paris

As part of the Intensive Program in Professional Pastry at Ferrandi, all students are required to complete a 3~6-month internship. The school has contacts to some of the top pastry boutiques, hotels, and restaurants in Paris, and students have a certain degree of liberty in choosing the venue for his or her internship. I had set my mind on working at an independent boutique as opposed to a 5-star hotel or a 3 Michelin-star restaurants, and the place I eventually stumbled upon was Un Dimanche à Paris, a pastry shop tucked away in this cute passage in the stylish Saint-Germain-des-Pres neighborhood.

Actually,  let me rephrase. Un Dimanche à Paris is a lot more than just a pastry shop. On the first floor there is a spacious boutique for pastries and chocolates, an exhibition kitchen, a restaurant that also functions as a tea salon in the afternoon, and up on the second floor there is a sleek teaching kitchen and lounge area. You can find out more  through its official website (French only).

So why did I choose Un Dimanche à Paris? Well, I didn’t, really. The situation was like this: despite Un Dimanche à Paris being one of the top pastry shops in Paris, no one from my session wanted to go there because UDAP only signs 2-month unpaid internships (which is actually not an uncommon practice among pastry shops in Paris). This means that not only do students not get paid, they also need to find another internship at the end of 2 months in order to fulfill the minimum of 3 months required by Ferrandi. Despite this, I visited the shop and had a good feeling about it…so I went ahead and signed – and thank god I did. I ended up loving the work and the people I worked with, and (fortunately) my team appreciated me as well and kept me for an extended internship of 5 months. It all worked out perfectly.

The other day I had a piece of homemade peach tart with cumin, a rather interesting flavor apparently inspired by Pierre Hermé. Intrigued, I decided to drop by the Pierre Hermé boutique myself for a taste of  his Tarte Rose, Peche & Cumin (€7). Here it is, in a shortcrust pastry: almond-rose cream, fresh yellow peaches and sugar spiced with cumin. The flavor profile is certainly very unique as cumin is not usually associated with roses and peaches, but somehow the combination works. A pleasantly memorable piece.

AJ, an American Cook in Paris, is one of the very talented people I met during my studies at Ferrandi. This big, chummy guy from Texas had already been working in the kitchen for years before joining us amateurs at pastry school, so when he invited me and a few other friends over for a fried chicken dinner, I knew it was going to be a very, very good one…

If you’ve read my first post on Cafe Pouchkine, you know that I’m not really a huge fan of this Russian-inspired French pastry shop. The resplendent boutique and lavishly decorated pastries might appeal to the eye (or not, depending on your tolerance for gold leaves), but the taste just didn’t suit my palate. I’ve always wanted to come back though, for its duo-colored macarons. They are just a bit too cute to miss.

Here they are. Adorable, no?

I tried a macaron pistache coeur fraise (€1.95), which is pistachio macaron with a strawberry heart. The size is generous and the texture is soft and chewy, but the pistachio flavor wasn’t really quite there.

A friend of mine has once referred to a particular pastry as her “soulmate”. Well, I’ve never thought of any pastry as my soulmate, but if I do, Beige from Mori Yoshida is probably it.

Beige (€5.30): chocolate shortcrust pastry filled praliné feuilleté, orange ganache, topped with Darjeeling tea and lime-flavored cream, and lastly finished with white chocolate shavings. Delicate, elegant, and soothing, like a cup of perfectly brewed milk tea. I’m absolutely in love with it.

One more thing to love about Paris – the proximity of lush farmlands from which you can harvest the freshest produce of the season. Even those who can’t imagine shoveling potatoes out of mother earth would surely agree with me that strawberry picking (especially in weather like this) is absolutely perfect for a weekend morning. Try Les Fermes de Gally, currently open from 9am to 7pm everyday, to experience a bit of farm life fun.

Once you have arrived, get yourself a little pushcart (free to use) and some containers (€0.35/wooden container, €0.10/plastic container, €0.05/plastic bag). To save money and be eco-friendly, bring your own containers.

Then, find your strawberries (or any other fruit or vegetables you fancy) by following the signs.

Now, start picking!
