Some lovely recent tastings from Des Gâteaux et du Pain. Variation Citron (€6), literally a variation on the traditional lemon tart – the lemon cream has been infused with verbena (one of my favorite herbs to use in pastries!) and dotted with a few fresh raspberries. Light and refreshing.
Baba à la Pêche Blanche (€6), baba dough soaked with white peach juice, also perfumed with verbena. Ultra refreshing, perfect for hot summer days. If you love the combination of white peach with verbena like I do, try this.
La Vert Absinthe (€7), a very curious pastry inspired by “nature after the rain”, with mixed flavors of green tomato, lime, angélique, and fresh mint. The bottom is an intense lime cream perfumed with fresh mint, topped with green tomato jelly adorned with a piece of angélique. It wasn’t love at first bite because the flavor was very unfamiliar, but upon second and third bite I came to appreciate this unlikely combination. One small complaint – the tart shell was already very soft from humidity by the time of my purchase, so alas the crunchy texture was lacking.

I wish I had tried those! After tasting a variety of treats from a bunch of pastry shops in Paris, I found that I liked Des Gateaux et Du Pain the best. They really know how to control the sweetness of things, something I hadn’t expected.
