Japanese chef Hideki Nishi, previously at George V, now runs this discrete restaurant on a quiet street in the 15th arrondissement. As is typical of Japanese establishments in Paris, the design of Neige d’Eté is minimal and monotone – white walls, white chairs, white table clothes…so that the only colors that pop out are the fresh flowers, and of course the vibrant dishes that come out from the cuisine. We were there for lunch (€40), composed of amuse bouche, appetizer, fish course, meat course, dessert, and petits fours – a light and agreeable meal.
To start, a trio of amuse bouche: sablé parmesan with onion cream, terrine of foie gras, and olive kouglof.
Pumpkin mousse with chestnut cream.
Smoked bonita, lightly grilled, served with a salad of radish and shiso with truffle vinaigrette.
Pan-fried pollock with fresh and sauteed cèpe mushrooms.
Chicken with its own juice, seasonal vegetables, and capsicum sauce.
Damson plum tart with thyme ice-cream.
Petits fours: Earl Grey chocolate truffle, coffee cream puffs, and apricot coconut marshmallows.
There was no surprises or “wow” moments during my lunch at Neige d’Eté, but it was a very pleasant and soothing meal complemented by attentive service. Good address.
