Some recent tastings from Pierre Hermé. I’ve been spending a fortune at this shop since moving to Paris, and I just can’t help but get sucked back in there!
Yasamine (€7.20), macaron biscuits sandwiching jasmine tea cream, fresh mangoes, and house candied grapefruit. Jasmine-flavored pastries often reminds me of bathroom refresheners since this scent is frequently used for this purpose, but phew! – Yasamine did not have this problem. The sweetness from jasmine cream, the fruitiness from fresh mangoes, and the slight bitterness from candied grapefruit combined wonderfully together, and I was pleasantly surprised by this unusual combination.
Surprise Yu (€7), a dome of crunchy meringue enveloping yuzu mousseline cream, fresh apple cubes, and apples cooked with yuzu. I’ve never tried one of Pierre Hermé’s “surprises” before mainly because I’m not a fan of meringue (and these surprises are always meringue-based), but the combination of yuzu and apple was what piqued my interest. Not bad.
I’d already tasted the Tarte Rose, Pêche & Cumin (€7.20) last year around this time, and I was happy to see it in store again. This tart, apparently inspired by Femme, a fragrance by Rochas, is composed of shortcrust pastry, rose-flavored almond cream, fresh peaches, and sugar spiced with cumin. The combination of yellow peach (each slice in its perfectly ripe state), rose, and just a dash of cumin, is very, very lovely.
And lastly, two little macarons: Jardin sur la Baie d’Ha Long, and Velouté Satine (€2.10 each).
Jardin sur la Baie d’Ha Long is the latest addition to Pierre Hermé’s garden collection, and features the combination of coconut, ginger, lime, and fresh coriander, as inspired by “a walk along the rugged Vietnamese coastline.”
Velouté Satine, is yogurt-based like PH’s other velouté macarons, and combines passionfruit with orange. Wonderfully zesty.
