If you’ve been following my blog for the past few months, you know that I go to Pierre Hermé almost every other week, if not more often. Here are a few recent tastings that I need to share with you…
Tarte Miraflorès (€6.90): caramelized puff pastry, mascarpone cream spiced with Peruvian peppercorns, topped with fresh strawberries and fresh mangoes. Yes, the mascarpone cream is spiced with Peruvian peppercorns, but don’t be scared – it’s absolutely delightful. The peppercorn taste is subtle but evident, a unlikely yet brilliant accompaniment for the fresh fruits.
Montebello (€6.90): dacquoise pistachio biscuit, pistachio mousseline cream, fresh strawberries (or raspberries depending on seasonal availabilities). I’ve always loved the combination of strawberries and pistachio – so much so that my colleagues at the pastry shop customized a birthday cake for me using this duo – and Montebello really hits the spot for me. As pistachio is expensive, many shops either don’t use top quality pistachio paste, or don’t use enough pistachio paste. Pierre Hermé, of course, chooses only the best of the best and is never stingy with the amount…naturally, the pistachio mousseline cream is heavenly aromatic and strong.
Inca (€6.90): hazelnut dacquoise biscuit, rich chocolate cream, candied grapefruit, avocado and banana compote, enrobed in thin layers of white chocolate. I was intrigued by the inclusion of avocado in this pastry and decided to give it a try, but in the end was not impressed by the ensemble. You can taste it for yourself to see whether this fits your palate, but I won’t be buying another Inca anytime soon…
