My first visit to DN innovación, a Spanish restaurant specializing in creative molecular cuisine.
Crispy breadsticks accompanied by three varieties of Spanish olive oil – Picual, Hojiblanca, and Arbequina.
A basket of warm house made bread with truffle butter, cumin butter, and spiced olive oil.
Also served with extra virgin olive oil and Modena vinegar.
A bottle of Clos Apalta 2007 that my lunch dates brought along.
Daily special salad, a dainty plate of pickled vegetables – cherry tomatoes, zucchini, garlic, onions, and olives.
2nd course, homemade “molecular egg” with Spanish “chorizo” with dried potatoes.
I quite liked the wild mushroom creamy rice, topped with fragrant Parmigiano Reggiano cheese and a scoop of foie gras foam.
Ink sauce stewed baby Yilan squid with orange and coriander emulsion was memorable because of its refreshing fruity notes, but the squid itself didn’t stand out to me.
For main course I picked the low temperature roasted Spanish Iberico suckling pig, which isn’t actually on the 980 NTD lunch menu but the restaurant was able to accommodate my request, probably because I was there with two of their frequent patrons.
Tender meat, with a thick layer of crispy fat.
What looked like coal was actually mountain yam in ink sauce. Delicious.
I don’t remember much about what dessert tasted like, but loved its presentation – a lush little garden on the plate!
I wasn’t blown away by the meal, but I wouldn’t mind coming back again to see what else the chef has got in his sleeves.
